Chicken & leek parcels
Ingredients
1 Chicken breast fillet
1 leek
150 grams sliced mushrooms
Seeded mustard
400ml lite sour cream
filo pastry
Method
Thinly slice leek and sauté in a little oil. Slice the chicken and add this to the pan.
When the chicken is browned add the mushrooms and cook until soft.
Now add a big fat tablespoon of mustard and the sour cream and mix well.
On a square sheet of filo place some chicken mixture in the middle. Fold the top down and the bottom up. Then fold over the left hand side and roll over. You should end up with a rectangular parcel about 15cm x 7cm.
Put them in a moderate oven on a lightly greased baking tray for about 10 minutes.
Serve with some nice steamed vegies and a glass of Semillon.
