Chicken pesto pasta

Ingredients

1 smoked chicken breast (deli section at the supermarket has this)

100gr mushrooms (any will do, I like Swiss Brown)

few florets of broccoli

pesto (fresh is better so get it from a deli if you can’t be bothered making it)

lite cream

chicken stock

oil

Method

Put a large saucepan of water on to boil

Cut chicken breast in half long ways and then slice it up.

Cut broccoli into florets and steam/micro until just tender

Slice mushrooms and sauté lightly.

Add chicken and mushrooms to pan and mix in pesto.

When pasta is cooked, drain and leave.

Add a little bit of cream/stock to pan.

Add pasta to pan and toss.

Eat and enjoy.

Very nice with a glass of rose or perhaps a chardy

Serves 2-4 (depending on how hungry you are)
