Gambas al ajillo (garlic prawns)

No kissing for you after these!  And you must mop up all the hot garlicky oil with fresh crusty bread.

 

Ingredients

12 medium green prawns, butterflied tails intact

2 cloves garlic crushed

1 tablespoon flat leaf parsley roughly chopped

Olive oil

Dried red chilli pepper seeds removed

Strong earthenware casserole dish

 

Method

Preheat oven to 250.

Put about 1 cm of olive oil in the bottom of the earthenware dish, add the garlic and chilli.  Put into the oven until sizzling.  Take it out and sit the prawns on top.  Swirl it around and make sure that they are coated in oil, then back in the oven until they have changed colour (no more than 5 minutes, make sure you keep an eye on them).

Serve still sizzling in the same dish sprinkled with the parsley.
