Ingredients
300gr watermelon
120gr crumbling fetta
Handful basil leaves
1 tblsp lemon juice
Handful toasted pumpkin seeds
Sprouts to garnish
Method
Cube the watermelon removing the seeds if you forgot to buy the seedless variety
Place artistically on a shallow serving plate.
Crumble the fetta over the top and then sprinkle the torn basil leaves.
(Tearing is better than chopping as it doesn’t bruise the herb)
Next layer is the toasted pumpkin seeds and finally the sprouts.
Drizzle the lemon juice and away you go.
As this is a side dish,go for whatever matched the rest of your food!
