It’s truffle season and black gold is everywhere. Appearing on menus across town and inspiring people with its amazing aroma this prized ingredient holds a fair degree of mystery for many.
The Truffle Melbourne 2014 hunt program is designed to let you in on some of the secrets. Truffle Melbourne has teamed up with 4 boutique Victorian growers who’ll share their truffle secrets, offering you a chance to join the smartest truffle dogs in sniffing out fresh black diamonds.
Four different truffieres to choose from – all no more than 90 minutes from town. You can see the list here. I was invited by Visit Ballarat to join the hunt at Black Cat Truffles in Creswick and spent a wonderful morning learning about how they are farmed and found.
Black Cat Truffles
Lynette and Andres at Black Cat Truffles are great hosts and they’re successful truffle growers of not only the French black truffle, but also the summer truffle (Tuber aestivum). They have just opened a special tasting shed for the 2014 season. One of their hunts is paired with a truffle lunch at nearby Captains Creek Winery, another features local chef Peter Ford offering hands-on truffle cooking classes. All their hunts offer 3 truffle tastings.

TRUFFLES MADE EASY
A one day cooking class with well-known local chef Peter Ford. Hunt for the elusive truffle with truffle dog Ella then learn how to cook simple dishes and get the most out of your truffles. You won’t leave hungry.
If you’re hands on and want to learn about truffles but not leave Melbourne, then why not a class with ‘Danny Pasta’.
Hosted Daniel Tonin (Pasta Classica) who works with Melbourne’s top hotels, catering companies and chefs, together with Rachel Truscott from Truffle Distributors Australia, and featuring the finest Stonebarn truffles from Pemberton WA, these classes are designed to celebrate what has been described as ‘the diamond of the kitchen’, and educate you in all things truffle-related, from where they grow, and how they are collected, to how to select, prepare, cook and store them at home.
With a maximum of 15 people per class, and held in a number of venues throughout Melbourne, Danny will show you not only how to make his world-class pasta dough, but share with you some of his favourite ways to cook with truffles, offer cooking advice, tastings, and recipes to take home, as well as other ways to use your truffles, including making truffle butter and salt.
Ending the session with pasta truffle dishes cooked by Danny, and featuring matched wines from our friends at Rathdowne Cellars, this is the perfect way to spend a couple of hours, and at only $95 per person, these classes represent excellent value, so grab a friend or a group, and book your closest venue via EventBrite.
There will also be an opportunity to buy fresh truffles on the day, so you can recreate Danny’s recipes at home.
