If you can get over the kitschey cutey name, this Chilli Crab Zoodles is a fabulous summer dish, so stick with it and read on. Zoodles are noodles made from long julienned zucchini. Made with either a julienne attachment on a mandolin (or V Slicer) or with a new fangled piece of equipment called a vegetable spiraliser, zoodles are quick to make and lend themselves to a variety of sauces.
Zucchini and crab have long been friends on the Second Helping table so this seemed an easy way to combine the two.
One medium zucchini should produce enough noodles for one serve, so multiply this out as you need.
Ingredients for two serves
2 medium zucchinis – turned into noodles
1 cup cooked crab meat
1 small red shallot, finely diced
1 clove garlic, crushed or finely diced
2 birds eye chillies, finely sliced
handful of basil leaves, shredded
extra virgin olive oil
Sauté the garlic and shallot in a good slug of olive oil over a medium heat. When the shallot has turned translucent add the crab meat and chillies and stir through until crab is heated through.
Add the zoodles and basil along with another slug of olive oil and toss through for one to two minutes. And that’s it, you’re done. All that is left to do is sit down and enjoy.
